UPDATED: Chipotle Restaurant Rolling Toward Grand Opening

Part of thespace that once housed Borders Express will be serving burritos and other Mexican fare in March.

Chipotle Mexican Grill, 450 Paradise Road, has a tentative grand opening date of March 20, said Joel Bond, Chipotle development consultant.

Construction is expected to be completed by March 12, at which point the restaurant will be handed over to management and staff for training and other preparations for opening.

The restaurant will create 25-30 openings for management and staff positions, he said.

Chipotle specializes in fast, casual dining and serves naturally raised beef with no antibiotics or growth hormones and seeks out local sources for vegetables, Bond said.

Food is served cafeteria-style and prepared to order in front of the customers, he said.

One of the more popular items on the Chipotle menu is its chicken burrito.

Chipotle originated in Denver, Colo., in 1993. There are now more than 1,100 restaurants in about 37 states.

The Swampscott Chipotle will serve beer but no wine or liquor.

Typical restaurant hours are 11 am to 10 pm, seven days a week.
